Our food truck began as a seasonal pop-ip version of Tulum's famous Charly's Vegan Tacos, a staple for traditional Mexican food lovers, flexitarians and foodies alike, looking for healthier food options that would not sacrifice the taste and flavor of traditional foods. Influenced by his grandmother's traditional Mexican cooking, Chef Charly brought his much-loved food concept to Palmaia, offering a healthier alternative to typical Mexican street food.
